Scrambled Tofu

INGREDIENTS
- Coconut oil (to cook in)
- 300gm Silken tofu
- 1 large tomato
- 1/2 Capsicum
- 1/2 Zucchini
- 3-4 slices of Daikon radish
- 1tsp bone broth (optional)
Kimballe’s Spice mixture (a generous sprinkle of):
- Italians herbs
- AYAM Curry powder
- Smoked paprika
- Roasted Indian curry powder
- White pepper
For serving:
- Mixed lettuce
- Avo
- Detox pesto
- Pumpkin seed oil
- Coriander
METHOD
- Quarter the tomato, then dice the capsicum, zucchini, and daikon radish.
- Heat some coconut oil in a frypan over medium heat. Add the diced vegetables and tomato, cover with a lid, and cook for 5 minutes.
- Once cooked, remove the tomato and set it aside.
- Cube the silken tofu and add it to the pan. Use a spatula to scramble the tofu and combine it with the vegetables.
- Season generously with spices like Italian herbs, curry powder, smoked paprika, roasted Indian curry powder, and white pepper. Stir in 1 teaspoon of bone broth and mix everything thoroughly.
- In a bowl, arrange a bed of mixed lettuce. Top it with the scrambled tofu and veggies, along with the cooked tomatoes and avocado. Garnish with detox pesto, pumpkin seed oil, and coriander.
