Nori Salmon Muffins

INGREDIENTS

Sauce:

  • 2tsp Dijon mustard
  • 2tsp bone broth
  • 1/2 tsp wasabi
  • 2tbsp sesame oil
  • 2tbsp avocado oil
  • 1 tsp maple syrup

Filling:

  • 2 fillets Salmon (320gm)
  • Half choko
  • Half capsicum
  • 3 slices Daikon radish
  • 1cm ginger
  • 1cm turmeric
  • Nori seaweed sheets
  • Avocado (for serving)
  • Sesame seeds (for serving)
  • Coconut oil

METHOD

  1. Begin by preheating the oven to 200 degrees Celsius
  2. In a jug, combine all the ingredients for the sauce, stirring until you achieve a smooth consistency.
  3. Meanwhile, dice the choko, capsicum, daikon radish, ginger, and turmeric. In a saucepan, steam these diced vegetables with a touch of coconut oil.
  4. While the vegetables are steaming, if your salmon has skin, carefully remove it. Then, dice the salmon into cubes.
  5. Take the Nori Seaweed sheets and cut each one into quarters. Place one sheet in each mould. Fill each mould about 3/4 full with the steamed vegetable mixture and then top it with the diced salmon cubes.
  6. Drizzle the prepared sauce over the top of each mould. Place the moulds in the preheated oven for approximately 15 minutes at 200 degrees, or until the salmon is fully cooked.
  7. When ready, serve your dish with slices of avocado, a sprinkle of sesame seeds, and a drizzle of the remaining sauce.
